How Monk Fruit Mogrosides Are Extracted

Monk fruit (Siraitia grosvenorii), native to southern China and northern Thailand, has been used in traditional medicine for over 800 years. The intense sweetness of the fruit — estimated at 150–250 times sweeter than sucrose — is not caused by fructose or glucose, but by a class of cucurbitane-type triterpene glycosides called mogrosides. Among these, Mogroside V is the most abundant and the primary compound responsible for the sweet taste. Unlike stevia's rebaudioside compounds, mogrosides do not produce a bitter metallic aftertaste at high concentrations. Our extraction process begins with hand-harvested fresh monk fruit at peak ripeness. The fruits are gently crushed and steeped in hot purified water — a classical aqueous diffusion process that avoids ethanol or solvent-based extraction methods used by some manufacturers. The diffused liquid is then passed through a series of plant-based ion-exchange resins that selectively bind organic acids and bitter tannins while allowing the sweet mogrosides to pass through freely. A second-stage ultrafiltration membrane (0.1 micron) removes residual plant particulates and proteins. The final concentrate is spray-dried at low temperature to preserve bioactivity, yielding a fine crystalline powder of 50–60% Mogroside V purity. Importantly, mogrosides are not metabolised by human digestive enzymes. A 2017 study published in the journal Food Chemistry confirmed that Mogroside V passes through the gastrointestinal tract largely intact, with a portion reaching the colon where it is fermented by gut microbiota into secondary metabolites including mogroside III and isomogroside III. This means there is no caloric contribution from mogrosides — a fact confirmed by multiple metabolic studies showing a glycemic index of 0 for monk fruit sweetener. Additionally, research from the Shanghai Institute of Nutrition and Health (2019) demonstrated that Mogroside V exhibits dose-dependent antioxidant activity comparable to that of Vitamin C in oxygen radical absorbance capacity (ORAC) assays.
