Why Off Sugar Browns and Bakes Like Real Sugar

The culinary chemistry behind why erythritol-based blends achieve the Maillard reaction, caramelisation, and structural rise that stevia and aspartame cannot.

One of the most common complaints about sugar-free baking is flat, pale, or gummy results. This happens because most high-intensity sweeteners — stevia, sucralose, aspartame — are used in minuscule quantities (microgram-to-milligram range) that cannot replicate sugar's structural roles in baking. Sugar in baking is not only a sweetener; it is a moisture-retaining humectant, a Maillard reaction partner, a crystallisation scaffolding agent, and a fermentation substrate for yeast. Off Sugar's 1:1 replacement ratio is made possible by erythritol's physical characteristics. Erythritol has a molecular weight close to glucose (122.12 g/mol vs. 180.16 g/mol for glucose) and a similar crystal lattice structure. When erythritol crystals are creamed with butter at room temperature, they aerate the fat matrix in the same way as sucrose, trapping air bubbles that expand during baking to create lift. When erythritol is heated above 120°C, it undergoes thermal decomposition producing carbonyl compounds that participate in browning reactions with amino acids in the batter — the Maillard reaction — producing the characteristic golden colour and roasted aroma of baked goods. Stevia-only products cannot achieve this because rebaudioside A (the primary steviol glycoside) is used at concentrations of 0.02–0.04% by weight — too low to affect batter structure. Aspartame decomposes above 120°C, making it completely unsuitable for oven baking. Xylitol can achieve some browning but is toxic to dogs and has documented laxative effects above 30g per serving. Erythritol's caramelisation temperature (160°C) is only slightly higher than sucrose's (160–180°C), meaning it works in standard oven temperatures (160–200°C). The result is cookies with golden crisp edges, cakes with domed rises, and caramel glazes with the characteristic amber colour — all without a single gram of added sugar.
